A Raspberry Lime Mojito is a refreshing cocktail that combines the flavors of fresh raspberries, zesty lime, light rum, and mint. It is a drink that is perfect for many occasions, especially a hot summer day, brunch with friends, or enjoying a quiet evening at home. If you love mojitos, I also have a Cranberry Lime Mojito you will love!

Ingredients & Substitutions

Raspberries: Fresh raspberries will be muddled with mint and simple syrup. Muddling is when you gently mash the berries and mint, releasing the juices. No muddler? No problem. Use the end of a rolling pin or the end of a wooden spoon to gently press and release the lovely aromas.

Mint Leaves: Mint is known to be a calming herb. That is just another reason to sip away and relax!

Simple Syrup: Simple syrup is a sweetener that can easily be made at home with just sugar and water. It is often used in cocktails, coffee, and tea as well as added to baked goods.

Lime Juice: Freshly squeezed lime juice is the best. Also, have another one on hand for garnish.

Rum: Rum is the alcoholic base of a mojito. Look for light rum, also known as white or silver rum.

Club Soda: I love a little fizz in my drink, so I topped it off with club soda. You could also use sparkling water or seltzer water. If you want a bit more sweetness, try topping off your drink with lemon-lime soda.

Steps for Making a Raspberry Lime Mojito with Raspberries, Mint, Simple Syrup, and Muddling.

Can I Make This Without A Cocktail Shaker?

Sure! If you don’t have a cocktail shaker, you can still easily make this drink. Use a traveling coffee mug with a tight lid. After muddling the raspberries and mint with simple syrup, pour in the lime juice and rum. Add ice, cover the opening mouth part, and get shakin’! Open it up and pour it into the glass of ice. Top with club soda. Or, make this without shaking and just layer the ingredients into a glass over ice and stir.

If you would prefer to make this drink without alcohol, you certainly can! First, muddle the raspberries and mint leaves with simple syrup. Then, add the lime juice. Pour over a glass of ice and top with club soda, sparkling water, or lemon-lime soda. Just skip the rum!

What the Test Kitchen had to say about this recipe:

Autumn

I do not normally care for mojitos but I REALLY liked this one. The raspberry flavors pair perfectly with the mint and lime. Super refreshing and great for summer!

Elizabeth

Another refreshing cocktail! I thought I didn't really like mixed drinks, but the last couple we tested were really good! To me, that means not too sweet with a subtle flavor. At first, I thought the rum would be overpowering, but not at all! Cheers to this raspberry lime mojito!

Selena

Such a light, refreshing cocktail. I thought the mint would be too strong, but it balances out so nicely with the fresh raspberries and lime juice.
