Hi Sans – I double checked the numbers, had someone else double check, and then another person run the numbers just to see what results we would get. It was the same every time. To be quite honest, My Fitness Pal is very nitpicky and will often auto-populate totals and change your amounts, so I can see how you could have made an error in your calculations. Rest assured, the calculations in the post are correct.

It matched all the same ingredients and here are the results:

Hi Laura! Did you use cake flour? It’s almost impossible to get a wet batter based on the amounts of the ingredients. 3 cups cake flour vs. just over a cup of the liquid total in the sconuts. It is definitely on the dryer side. However, I will remake and review the glaze amounts, as we used it to pour over the sconuts to coat completely, maybe others won’t do that.

Made this a few minutes ago- I weighed out my ingredients (making no substitutions) and the dough was very soft. More like a muffin batter. I added another 1/4 cup after mixing it up and scraped it onto a floured piece of parchment and generously floured the top to pat it out to a round. There was no way I was going to be able to cut it into eight and have it slide apart into separate pieces so I just scored it (the dough stuck to my bench scraper) and baked it then cut apart after baking. I halved the glaze and still had leftovers. They taste like a biscuit to me.
I think the flour ratio is off and you might consider halving the glaze! Just a heads up if anyone else makes them and the dough is too soft to cut apart- just bake in one large round and cut after!

You can make your own cake flour… Measure 1 level cup of all-purpose flour, remove 2 tablespoons of the flour and add 2 tablespoons of cornstarch to the all-purpose flour. Whisk together to combine and use as a substitute for 1 cup cake flour. 🙂 Good luck!!!
