Any idea how different the cake consistency becomes using a Gluten Free flour blend such as Bobs Red Mill 1:1?

I am not an experienced baker and I gave this beauty a shot for Father’s Day. I am so glad I did! It was delicious! I also made it with the stabilized whipped cream frosting and it was the perfect pairing. SOOOOO good!!!
