Buffalo Chicken Dip
Buffalo wings are an appetizer favorite, but when you can’t get the wings made, try this Buffalo Chicken Dip recipe. It is simple to prepare, and much easier to make than a batch of wings. You get all of the amazing tang and heat of the buffalo wings (including the amazing flavor from homemade buffalo sauce), without all of the prep work or the mess and clean-up! This whole dish is cooked in your trusty skillet. Make sure you try my Skillet Onion Dip for another dip you can bake in your cast-iron dishware!
Dip Ingredients
For this recipe, be sure to have an oven-safe skillet, like a cast-iron skillet. I would go with at least a 12-inch for this recipe since it makes quite a bit. If you want to skip the skillet, you can always try my crockpot buffalo chicken dip too!
Chicken: You will need 2 cups of rotisserie chicken for this recipe. Shred the chicken or cut it into cubes.
Buffalo Sauce: If you don’t have any on hand, make your own buffalo sauce. Do not use hot sauce in this recipe; I explain a little bit more about the differences between the two later.
Cream Cheese: For easy mixing, make sure the cream cheese is at room temperature.
Ranch Seasoning Mix: If you don’t have a store-bought packet, here is a recipe to make your own dry ranch seasoning mix.
Sour Cream: Adding sour cream to the dip makes it even creamier.
Cheese: I like adding shredded mild cheddar cheese to the dip.
Toppings: Add blue cream crumbles (or some blue cheese dressing) on top of the warm dip. In addition, you can always add some green onions for garnish.
How to Make Buffalo Chicken Dip
To make this Skillet Buffalo Chicken Dip recipe, first, mix together all the dip ingredients in a large bowl. Next, pour the ingredients into a cast-iron, or oven-safe, skillet. Place the skillet in the oven to bake for 20-25 minutes, or until the cheese is hot and bubbly.
When the dip is hot, remove it from the oven and stir it well. And, that’s it! Grab some tortilla chips and dip them right into the skillet! This stuff goes pretty fast, but if it does end up sitting out for a while, you can always pop it back into the oven for a few more minutes and it will be as good as new.
Hot Sauce vs. Buffalo Sauce
The first time I ever tried to make Buffalo Chicken Dip I didn’t have any Buffalo Sauce on hand and thought it would be ok to substitute hot sauce. IT WAS NOT OK. There is a very big difference between the two so make sure you use buffalo sauce. Hot sauce is made with hot peppers and vinegar. Buffalo sauce uses hot sauce as the base but calms it down with butter and garlic. It’s still spicy, but far less intense. These two sauces should not be used interchangeably in recipes.
How to Serve Skillet Buffalo Chicken Dip
I am a HUGE fan of serving this Buffalo Chicken Dip with blue cheese. Try sprinkling it with Blue Cheese crumbles or simply pouring some dressing right over the dip. Just be mindful that the dressing is cool and the dip is hot, so you will want to make sure it is being served and eaten right away. Since this dip is best served hot, I love it in a skillet because cast-iron skillets retain heat better. If you are having a party and the dip has been out for a while, just pop it back in the oven for a bit to re-heat. I would also reheat any leftovers in the oven and not the microwave. It is delicious with chips and celery.

Skillet Buffalo Chicken Dip
Ingredients
- 2 cups rotisserie chicken, shredded or cubed
- ½ cup (136.5g) buffalo sauce
- 8 ounces cream cheese, room temperature
- 3 teaspoons dry ranch seasoning mix
- ½ cup (115g) sour cream
- 1½ cups (169g) mild cheddar cheese, shredded
- ¼ cup (38g) blue cheese crumbles, optional for topping
- green onions, optional for garnish
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the chicken, buffalo sauce, cream cheese, ranch seasoning mix, sour cream, and shredded cheese. Stir well to combine.
- Pour the mixture into an oven-safe skillet.
- Transfer the skillet to the oven and cook for 20-25 minutes, or until cheese is hot and bubbly.
- Stir well before serving.
- Sprinkle the dip with blue cheese crumbles and green onions (optional). Serve hot with chips or celery.
