Oatmeal Caramel Apple Bars

Oatmeal Caramel Apple Bars are a cross between apple crisp and caramel apple pie. These are so crisp and buttery and gooey, you are going to be addicted! Have one with a glass of milk or bring them to your next potluck or family gathering for a treat that everyone will love!

Ingredients

There are four main parts to this recipe—the crust, the apple filling, the caramel layer, and the oatmeal crumble topping.

Crust: Use cold butter for the crust. You will bake it for about 15 minutes before adding the other layers.

Apples: I use Granny Smith apples in most of my baked apple desserts. They hold their shape well and the tartness complements the sweet caramel. A few other options you could try would be Honeycrisp apples, Braeburn, or Pink Lady apples.

Caramel: If you don’t have any on hand, make your own homemade caramel to use. Yum!!!

Oatmeal: I used quick oats for the oatmeal crumble topping. You could use old-fashioned, or rolled oats, too.

How to Serve

These bars are delicious as-is, but you could always add more toppings to really step up the flavor. Serve them with a dollop of whipped cream, more caramel, or even some homemade vanilla ice cream!

How to Store Oatmeal Caramel Apple Bars

Store these bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. You could also freeze them; they will last up to 3 months in the freezer. Remember to label and date the container.

Oatmeal Caramel Apple Bars are dessert bars that are full of sweetened apples and a caramel layer, topped and baked with oatmeal crumble.

Ingredients

Crust

  • 1 cup (125 g) all-purpose flour
  • cup (42 g) confectioners’ sugar
  • ½ cup (1 stick / 113 g) cold butter, diced

Apple Filling

  • 3 cups granny smith apples, peeled, cored, and thinly sliced
  • cup (67 g) brown sugar
  • 1 teaspoon all-purpose flour

Caramel Layer

  • ¾ cup caramel topping
  • ¼ cup (31 g) all-purpose flour

Topping

  • ½ cup quick oats
  • ½ cup (1 stick / 113g) cold butter, diced
  • ¾ cup (94 g) all-purpose flour
  • cup (42 g) confectioners’ sugar

Instructions

Crust

  • Preheat oven to 325°F. Spray an 8×8-inch baking dish with nonstick cooking spray.
  • In a large bowl, blend the flour, confectioners’ sugar, and butter. You can use a food processor or pastry cutter, but I prefer my hands. You want the butter to be no bigger than a pea size and the ingredients well incorporated.
  • Press the crust into the prepared pan.
  • Bake for 15 minutes.

Apple Filling

  • In a medium bowl, combine the apples, brown sugar, and flour. Pour the apples over the baked crust.

Caramel Layer

  • In a small bowl, combine the caramel and flour. Pour over the apple mixture.

Topping

  • In a medium bowl, add cold butter, flour, confectioners’ sugar, and oatmeal. Using your hands, sift the flour over the butter and then start breaking down each piece into pea-sized pieces.
  • Crumble the oatmeal mixture over the apples and caramel mix.
  • Bake for 35 minutes.
